1T Cornflour    1/2C Milk    1ts Butter Microwave 30 seconds    Stir
Microwave another 20 seconds    Stir add 1/2 C Grated Cheese,  + 1xT Parmesan
Stir vigourously You may need to add more milk,
always remember to stir, and don’t microwave for much longer than
20-30 seconds at at ime or your Cornflour will go like clag!
Alternatives:  Diced bacon, corn, grated vegies like zucchini, leek, carrot
You can add a little bit of Chicken Stock for extra flavour too
TO ADD FAT to your Cheese Sauce for your CF CHild 
ADD 1 Tablespoon (20g) of Parmesan to 3 Tablespoons of Cheese Sauce
ADDS 7.7g Fat
Makes about 1/2 cup (approx 50g Fat)
(25g Fat per serve)
Ingredients  3 egg yolks  (approx 4.5g Fat ea)
1 tablespoon lemon juice
60g butter, cut into 1.5cm cubes (48g Fat)
Whisk egg yolks and lemon juice in a heatproof bowl

Place bowl over a saucepan of simmering water over low heat
Whisk for 3 minutes or until mixture becomes thick and pale
Add 1 cube butter. Whisk until melted
Repeat with remaining butter (this will take about 10 minutes)
Remove from heat. Season with salt and pepper
Delicious on Poached Eggs, Salmon etc
For 2 people you will need a Handful of Mushrooms
or 1 Large Field Mushroom   Butter for frying
Light Cream for Mum & Dad   Thick Cream for the CFer
a Dash of Wine…I use Spatlese Lexia
Yeah it SHOULD be red wine but sweet white gives it a nicer taste
Slice up Mushrooms and fry in butter til they’re well cooked and brown
Tip off excess Butter
Add Cream and a Dash of Wine
As the Cream cooks it reduces thus thickening
the longer you cook it the thicker it will get
if you cook it too long the oil will separate in the cream
If you cook it too quickly and your Steak isn’t ready turn it off
and if necessary add a dash more cream or milk to reheat it
Field Mushrooms are best
